Streusel Topped Banana Bread.


I only post my very favorite recipes here, and today my friends, this is one of them. I've tried several banana bread recipes in my life, ones that claim to be the healthiest, or the moistest... but this recipe is the most delicious. Because who doesn't think that a streusel topping would make banana bread the most delicious? Exactly.

So here's the recipe. If you try it and love it, let me know.

Streusel Topped Banana Bread
Bake at 350° for 45-55 minutes
This recipe yields one large loaf or two mini loaves

1 1/2 cups flour
1 1/2 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1 cup mashed bananas
2 eggs
1 tsp. vanilla
1/3 cup sugar
1/4 cup melted butter

streusel topping:
1/2 cup flour
1/2 cup brown sugar, packed
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/4 cup butter, room temperature

In a mixing bowl combine dry ingredients for the batter and add bananas, eggs and vanilla, mixing well. Add sugar and mix well, then slowly add melted butter until thoroughly mixed. Pour batter into a well greased loaf pan or two mini loaf pans.

In a separate bowl combine the flour, brown sugar, nutmeg and cinnamon for the streusel topping. Then with a pastry mixer or a fork and knife, add in softened butter until well incorporated and mixture is in pea size shapes. Sprinkle over batter in loaf pans to cover completely with a thick streusel topping.

Bake in a 350° oven for 45-55 minutes or until cooked through. Check for doneness by inserting a knife into center of loaf and if the knife is covered in batter when removed, cook for a few minutes longer until inserted knife is clean.
