Summer Fare.


Every summer we get on a taco kick. Chicken tacos, fish tacos, steak tacos, tacos, tacos, tacos. We don't get tired of them. Last night it was steak. And they were good. So I thought I would share our way of eating them... taco wagon style.

Marinated Steak Tacos:

Marinade:
juice of 1 fresh squeezed orange
juice of 2 fresh squeezed limes
3 Tbsp. soy sauce
2 Tbsp. Worcestershire sauce
1 tsp. salt
2 tsp. lemon pepper
1 tbsp. chopped cilantro

2 lbs. skirt steak

Place steak in a ziplock bag or shallow dish. Blend marinade ingredients and pour over steak. Let soak for at least 15 minutes. Grill steak to desired doneness. Let meat rest and then cut the meat into strips against the grain.

corn tortillas
shredded cabbage
chopped cilantro
sliced radishes
ranch dressing
Louisiana Hot Sauce [a.k.a. Trappeys, this is a long-time family favorite!]

Heat tortillas on stove top or griddle until slightly browned. Top with remaining ingredients and enjoy!

We love tacos because they're fast, cheap, delicious, healthy and easy! We mix it up throughout the week with chicken, steak, fish and pork, that way we never tire of tacos. We eat tacos several nights a week in the summer time, and the kids don't mind at all.
